Instructions:

1. Prepare the Sushi Rice:

- Rinse the sushi rice under cold water until the water runs clear.

- Combine the rice and water in a rice cooker or pot. Cook according to the rice cooker instructions or bring to a boil, then simmer covered for about 18 minutes. Let it rest for 10 minutes after cooking.

- In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the cooked rice. Allow the rice to cool to room temperature.

2. Prepare the Fillings:

- Slice the fresh fish and other fillings into thin strips or bite-sized pieces.

3. Assemble the Sushi Rolls:

- Lay a bamboo sushi mat on a clean surface and cover it with plastic wrap.

- Place a sheet of nori on the mat, shiny side down.

- Wet your hands with water to prevent the rice from sticking. Spread a thin layer of sushi rice over the nori, leaving a 1-inch border at the top.

- Arrange your chosen fillings in a line along the bottom edge of the rice.

- Using the bamboo mat, start rolling the nori over the fillings, applying gentle pressure to keep the roll tight. Continue rolling until the seam is sealed.

- Use a sharp knife to slice the roll into bite-sized pieces. Wipe the knife with a wet cloth between cuts to prevent sticking.

4. Serve:

- Arrange the sushi pieces on a platter.

- Serve with soy sauce, pickled ginger, and wasabi on the side.
