Spring rolls

Ingredients:

For the Filling:

- Salt and pepper to taste

- 1 tablespoon vegetable oil (for cooking the filling)

For the Wrappers:

- 12-15 spring roll wrappers (available at Asiatisk Mat)

For Frying:

- Vegetable oil (enough for deep frying)

Instructions:

1. Prepare the Filling:

- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

- Add the minced garlic and green onions, and sauté until fragrant.

- Add the shredded cabbage, grated carrots, bean sprouts, bell peppers, and mushrooms to the skillet. Stir-fry for about 3-4 minutes until the vegetables are slightly softened.

- Stir in the soy sauce, oyster sauce (if using), sesame oil, salt, and pepper. Mix well to combine.

- Remove the skillet from heat and let the filling cool completely.

2. Assemble the Spring Rolls:

- Lay a spring roll wrapper on a clean, flat surface with one of the corners pointing toward you (so it looks like a diamond shape).

- Place about 2 tablespoons of the cooled filling near the corner closest to you.

- Fold the corner over the filling, then fold the left and right corners toward the center, rolling tightly as you go.

- Seal the edge of the wrapper with a little water or a beaten egg to keep the spring roll tightly closed.

- Repeat the process with the remaining wrappers and filling.

3. Fry the Spring Rolls:

- Heat vegetable oil in a deep pan or pot to 350°F (175°C).

- Carefully add a few spring rolls at a time to the hot oil, making sure not to overcrowd the pan.

- Fry the spring rolls for about 3-5 minutes, or until they are golden brown and crispy.

- Use a slotted spoon to remove the spring rolls from the oil and place them on a paper towel-lined plate to drain excess oil.

4. Serve:

- Serve the spring rolls hot with your favorite dipping sauce, such as sweet chili sauce, hoisin sauce, or soy sauce.
