Igado

Igado is a traditional Ilocano dish from the northern regions of the Philippines, known for its savory and slightly tangy flavors. This hearty meal typically features pork and liver cooked with vegetables in a vinegar and soy sauce mixture, resulting in a rich and satisfying dish that's perfect with steamed rice.

Ingredients:

- 1 kg pork shoulder or belly, sliced into strips

- 200 g pork liver, sliced into strips

- 2 medium potatoes, diced

- 1 medium carrot, sliced into strips

- 1 red bell pepper, sliced into strips

- 1/2 cup green peas

- 1/4 cup soy sauce

- 1/4 cup vinegar

- 1 cup water

- 1 large onion, chopped

- 4 cloves garlic, minced

- 2 bay leaves

- 1 teaspoon whole black peppercorns

- 2 tablespoons cooking oil

- Salt and pepper to taste

- Cooked rice (for serving)
